Chef Victor’s love of the culinary arts began at an early age watching Julia Child on TV. His very first summer job was washing dishes and cutting vegetables in a hotel in Southampton, and he never looked back. He continued to cook every summer and weekend during high school.


Chef Victor went on to study Hotel & Restaurant Management in college. In 1988 he attended the prestigious French Culinary Institute in NYC, where he graduated top in his class. He continued to hone his skills in both culinary and pastry at many restaurants, hotels, and private clubs from New York to Massachusetts.
In 1998 he opened his own restaurant, and in 2000 another. During his career Chef, Victor has received much media attention including numerous TV and radio appearances, high marks from both The Zagat Survey and The New York Times, and even a photo in Bon Appetit Magazine.


In 2005 Chef Victor decided to share his knowledge with the next generation of cooks and became a licensed Chef Instructor at The Culinary Academy of Long Island. Culinary education became a new passion. In 2009 ACCSC, a national education accrediting agency, named Chef Victor ‘Instructor of the Year’ for the entire country. That same year he was promoted to Corporate Executive Chef and helped the school grow to five campuses in three states where he oversaw all the students, chefs, and curricula.


In 2013 when the founder retired, Chef Victor was again promoted, this time to Campus President for The Culinary Academy of Long Island. During his tenure, he was instrumental in the success of thousands of students who have gone on to achieve their own culinary dreams. In 2019 Victor teamed up with Vincenzo Saulle owner and winemaker of wineUdesign to launch The Cook’s Studio at wineUdesign, a recreational culinary school, and event space right in the barrel room of wineUdesign in Hicksville.
